The tea is made from tender early-spring buds and young leaves, hand-plucked when the new growth is at its most delicate. The region's cool climate and clean mountain water are considered essential to the tea's refined character. Production remains small and skilled, with the defining sealed-yellowing step requiring careful judgment of temperature, moisture, and time.

Production process

Early-spring bud plucking

Tender buds and young leaves are hand-plucked in early spring, when the new growth is most delicate and sweet. Careful selection is essential to the tea's quality.

Kill-green (sha qing)

The fresh leaves are pan-fired at moderate heat to halt enzymatic oxidation, much like green tea. This locks in the fresh character before the yellowing step that follows.

Sealed yellowing (men huang)

The warm leaves are wrapped and lightly smothered to rest, allowing a gentle, slow non-enzymatic mellowing. This signature step is what distinguishes yellow tea from green, softening the grassy notes into sweet, rounded flavor.

Repeated firing & resting

The leaves are alternately gently fired and rested several times. This slow, patient cycle deepens the yellowing and develops the tea's characteristic corn and chestnut sweetness.

Final drying

A final low, careful drying brings the moisture down for storage while preserving the delicate sweetness and soft golden color. Over-firing would push it toward green or roasted character.
