Brew the elderflower gently — about 5 minutes is plenty. Steeping too long can pull out a faint bitterness from any stem fragments, so a light hand keeps the cup delicately floral and clean.

Ingredients

  • 1 tbsp dried elderflower blossoms (or 1 tea bag)
  • 1 cup hot water (95°C)
  • 1 tbsp honey
  • Juice of half a lemon
  • 1 thin slice of lemon, to serve

How to make it

  1. 1Place the elderflower in a cup or small teapot and pour the hot water over it.
  2. 2Cover and steep gently for about 5 minutes.
  3. 3Strain out the blossoms (or remove the tea bag).
  4. 4Let cool 1–2 minutes, then stir in the honey and lemon juice. Add a slice of lemon and serve warm.
