Traditional Irish Tea with Honey and Lemon

The classic Irish remedy for everything—strong Assam-led Irish Breakfast brewed properly, finished with raw honey and a squeeze of lemon.

There is a saying in Ireland that a cup of tea solves most problems—and the recipe is older than the saying. Irish Breakfast is built on Assam, the maltiest of black teas, with a touch of Kenyan or Ceylon for brightness. That malt is what makes it the perfect base for a wellness brew that's been a household remedy for generations.

Brewing properly is what separates real Irish tea from the limp cups served abroad. Water at a rolling boil. A heated pot (warm it with hot water first, then dump). Two heaping teaspoons per cup of loose leaf, or two strong tea bags. Then let it steep for a full four to five minutes—the leaves need time to surrender their full body.

Raw honey replaces the sugar most people grew up with. Stirred into a tea that's cooled for a minute, the honey keeps its enzymes alive and adds a soothing layer for the throat. A squeeze of lemon brings vitamin C and just enough brightness to lift the malt without cutting it.

Drink this at the first chill of an autumn morning or when a cold is threatening. Some Irish grandmothers add a tablespoon of whiskey to call it a hot toddy—optional, but tradition would not blame you.

Ingredients

  • 2 tsp loose Irish Breakfast (or 2 strong tea bags)
  • 1.5 cups freshly boiled water
  • 1 tbsp raw honey
  • Juice of half a lemon
  • 1 lemon slice for garnish
  • Splash of whole milk (optional, traditional)

How to make it

  1. 1Warm a teapot or large mug with hot water, then empty it.
  2. 2Add the tea leaves or bags. Pour freshly boiled water over and cover.
  3. 3Steep 4–5 minutes (no less—this is non-negotiable for a proper Irish brew).
  4. 4Strain into a cup and let cool 1–2 minutes off the boil.
  5. 5Stir in honey until dissolved, add lemon juice, and a small splash of milk if you want it traditional. Garnish with a lemon slice.
