Iced Scottish Breakfast with Honey and Lemon

A bold, refreshing iced tea made from strong-brewed Scottish Breakfast, sweetened with honey and brightened with lemon over plenty of ice.

Most iced teas are made from lighter blends, but the strength of Scottish Breakfast makes a genuinely satisfying iced tea—rich and malty enough that it doesn't fade away when poured over ice the way weaker teas do.

The trick with strong black tea is to brew it hot and concentrated, then chill it fast over ice so it stays bright rather than stewed. A little honey and a good squeeze of lemon balance the malty briskness and turn it into a proper thirst-quencher.

Because the tea is naturally bold, it carries flavor beautifully even when diluted by melting ice. That makes it perfect for a tall glass on a warm afternoon when you want the caffeine lift of your morning cup in a cool, refreshing form.

Serve it in a big glass with lemon wheels and a sprig of mint. It's the bold drinker's iced tea—nothing watery or shy about it, just strong malty tea made cool and refreshing.

Ingredients

  • 4 Scottish Breakfast tea bags (or 4 tbsp loose leaf)
  • 2 cups boiling water
  • 2 tbsp honey
  • Juice of 1 lemon
  • 2 cups cold water
  • Ice cubes
  • Lemon wheels and mint to garnish

How to make it

  1. 1Steep the tea in the boiling water for 4 minutes for a strong, concentrated brew, then remove the tea.
  2. 2Stir the honey into the hot tea until dissolved, then add the lemon juice.
  3. 3Pour the cold water into the tea to cool and dilute it, then chill in the fridge until cold.
  4. 4Pour over tall glasses filled with ice, garnish with lemon wheels and mint, and serve.
