Ingredients
- 2 tsp Jin Xuan milk oolong loose leaf
- 150 ml soft water, brought to 85°C
- 150 ml full-fat coconut milk (from a can, or barista coconut)
- 1 tsp raw honey (or maple syrup for a vegan version)
- 1/4 tsp pure vanilla extract
- Pinch of fine sea salt
How to make it
- 1Steep the Jin Xuan leaves in the 85°C water for 90 seconds in a small teapot. Strain into a measuring cup.
- 2In a small saucepan, gently warm the coconut milk over low heat until just steaming — do not let it boil, which can split it.
- 3Combine the brewed oolong and warm coconut milk in a mug or blender. If using a blender, pulse for 5 seconds to froth.
- 4Stir in vanilla, honey, and the pinch of sea salt — the salt brings out the natural buttery note of the Jin Xuan without making the drink taste salty.
- 5Pour into a warmed mug and serve immediately while still gently steaming.
