Sage and Honey Gin Sour
A herbaceous gin sour built on sage-infused syrup, fresh lemon, and honey—with an easy non-alcoholic mocktail version for a savory, grown-up sip any time.
Sage's savory, faintly camphorous character makes it a brilliant cocktail herb, and it pairs beautifully with gin's own botanical backbone. A simple sage-and-honey syrup carries the herb's grounded warmth into a classic sour, where fresh lemon keeps everything bright and balanced.
The syrup does the heavy lifting: steep fresh sage leaves in a warm honey syrup, then strain. This captures sage's herbaceous aroma in a clean, sweet base that blends smoothly into the drink without any bitterness or sediment.
Shake the gin, sage-honey syrup, and lemon juice hard with ice—add an egg white if you want that silky, classic-sour foam. The result is herbaceous, gently sweet, and refreshingly savory, finished with a single sage leaf floated on top.
For a non-alcoholic mocktail, skip the gin and build the drink on a base of strong, chilled sage tea instead. Shake the cold sage tea with the sage-honey syrup, fresh lemon juice, and a splash of soda water over ice—you get the same savory-herbal complexity and elegant foam without the alcohol, perfect for a calm evening ritual. Because sage naturally contains thujone, keep your servings moderate and avoid high or prolonged doses during pregnancy, breastfeeding, or epilepsy.
Ingredients
- 60 ml gin (or strong chilled sage tea for the mocktail)
- 20 ml sage-honey syrup (honey simmered with fresh sage, then strained)
- 25 ml fresh lemon juice
- 1 egg white (optional, for foam)
- Soda water (for the mocktail version)
- 1 fresh sage leaf for garnish
- Ice

- 1Make the syrup: gently warm 4 tbsp honey with 4 tbsp water and 6 fresh sage leaves for 5 minutes, then strain and cool.
- 2Add the gin (or chilled sage tea), sage-honey syrup, lemon juice, and egg white (if using) to a shaker. Dry shake without ice for 10 seconds.
- 3Add ice and shake again for 15 seconds until well chilled.
- 4Strain into a coupe or rocks glass. For the mocktail, top with a splash of soda water.
- 5Float a fresh sage leaf on top to garnish.
