Because the tea's aroma is delicate, the brewing here is intentionally soft: cooler water and a short steep protect the lotus fragrance instead of scalding it away, which can happen quickly with high heat on scented green teas.

Ingredients

  • 1 tsp loose lotus tea (or 1 lotus tea bag)
  • 1 cup hot water (80°C)
  • 1 tsp honey
  • 2 thin slices fresh ginger
  • 1 small slice fresh lemon (optional)

How to make it

  1. 1Heat water to about 80°C — just below a simmer, to protect the tea's delicate floral aroma.
  2. 2Place the lotus tea leaves and ginger slices in a cup or teapot. Pour the hot water over them.
  3. 3Steep for 2–3 minutes, then strain out the leaves and ginger.
  4. 4Stir in the honey while the tea is still warm, and add a slice of lemon if desired. Sip slowly.
