White Tea and Honey Panna Cotta

Panna cotta is the ideal canvas for a whisper-soft tea like Darjeeling White. The neutral cream and gentle set let the tea's floral, honeyed notes take center stage, producing a dessert that tastes more like perfume than pudding in the best possible way.

The trick is to steep the white tea generously in warm cream without scorching it. You want a long, low infusion that draws out aroma but never bitterness, since white tea turns harsh if the liquid is too hot. A few extra minutes off the heat does all the work.

Honey is the natural sweetener here. Its own floral character builds on the muscatel notes of the tea instead of masking them, and it keeps the panna cotta only lightly sweet so the delicate flavor never gets buried.

Ingredients

  • 2 cups heavy cream
  • 1/2 cup whole milk
  • 3 tbsp Darjeeling White tea leaves
  • 3 tbsp honey, plus more to drizzle
  • 1 tsp vanilla extract
  • 2 1/2 tsp powdered gelatin
  • 3 tbsp cold water
  • 1 ripe white peach, thinly sliced

How to make it

  1. 1Warm the cream and milk in a saucepan until steaming but not boiling. Remove from heat, add the white tea leaves, cover, and steep 15 minutes.
  2. 2Strain out the leaves through a fine sieve, pressing gently. Return the infused cream to the pan.
  3. 3Sprinkle gelatin over the cold water and let it bloom for 5 minutes until spongy.
  4. 4Gently rewarm the cream, then whisk in the honey, vanilla, and bloomed gelatin until fully dissolved. Do not boil.
  5. 5Divide among 4 glasses or molds and refrigerate at least 4 hours until set.
