- 2 eggs

- 1/2 cup chopped dried apricots or raisins
- 1/4 cup chopped walnuts (optional)
How to make it

- 3In a large bowl, whisk together the cooled tea, mashed banana, honey, eggs, and melted coconut oil.
- 4Stir in the oats, cinnamon, baking powder, and salt until well combined, then fold in the dried apricots and walnuts.
- 5Pour the mixture into the prepared dish, smooth the top, and bake for 28–32 minutes until set and lightly golden.
- 6Cool completely in the pan before slicing into bars. Store in the fridge for up to 5 days.
