Turkish Tea Poached Pears with Honey and Pistachio

Pears gently poached in strong, spiced Turkish çay until ruby and tender, finished with honey and crushed pistachios—an elegant nod to Turkish flavors.

Poaching fruit in tea is a beautiful way to capture çay's character in a dessert. Strong Turkish tea stains the pears a deep ruby and infuses them with a subtle tannic depth that balances their sweetness, while warm spices nod to the Turkish table.

A cinnamon stick, a few cloves, and a strip of orange peel turn the poaching liquid into something fragrant and festive. As the pears cook, the tea reduces into a glossy syrup you can spoon over the top, intensifying the flavor with every minute.

The finishing touches are pure Turkey: a drizzle of honey and a generous scatter of crushed pistachios, echoing the nut-and-syrup desserts that always accompany a glass of çay. The pistachios add color and a welcome crunch against the soft fruit.

Serve the pears warm or chilled, with a little of the tea syrup pooled around them and, naturally, a glass of strong Turkish tea on the side. It is a light, elegant dessert that still feels deeply rooted in Turkish flavor.

Ingredients

  • 4 firm pears, peeled with stalks intact
  • 3 cups strong brewed Turkish black tea
  • 1/2 cup sugar
  • 1 cinnamon stick
  • 3 whole cloves
  • 1 strip orange peel
  • 2 tbsp honey
  • 3 tbsp pistachios, crushed

How to make it

  1. 1Combine the strong tea, sugar, cinnamon stick, cloves, and orange peel in a saucepan and bring to a gentle simmer, stirring to dissolve the sugar.
  2. 2Stand the peeled pears in the liquid, cover, and poach gently for 20–25 minutes, turning occasionally, until tender.
  3. 3Lift out the pears and set aside. Simmer the poaching liquid uncovered until reduced to a glossy syrup.
  4. 4Stir the honey into the warm syrup.
  5. 5Serve the pears with the tea syrup spooned over them.
  6. 6Scatter generously with crushed pistachios before serving warm or chilled.
