Purple tea's natural violet hue makes it a genuinely photogenic cocktail ingredient — reduced into a light syrup, it turns a simple gin fizz into a pale lavender-pink drink without any artificial color, just the leaf's own anthocyanins doing the work.

The syrup is built by steeping the tea strong, then dissolving sugar directly into the warm liquid rather than brewing and reducing separately — this keeps the flavor clean and prevents any bitterness from developing, which matters since purple tea's appeal is its smoothness.

Ingredients

  • 45 ml gin (London dry style)
  • 30 ml purple tea syrup (recipe below)
  • 20 ml fresh lemon juice
  • Soda water, to top
  • Ice cubes
  • Lemon twist or a few fresh blueberries, for garnish
  • For the syrup: 1/4 cup loose Kenyan purple tea, 1 cup hot water, 1/2 cup sugar

How to make it

  2. 2Fill a tall glass with ice. Add the gin, purple tea syrup, and lemon juice.
