Iced Sage and Grapefruit Cooler

Sage might seem like a cozy winter herb, but cold-brewing transforms it into a strikingly refreshing summer cooler. Slow cold extraction mellows the camphorous edge and draws out sage's smooth, herbaceous, almost pine-fresh side—perfect over ice on a warm afternoon.

Grapefruit is the ideal partner. Its tart-sweet, slightly bitter citrus brings out the bright, resinous notes in sage and turns the savory herb into something lively and sophisticated. A little honey ties the two together.

Cold-brewing overnight is the move here. Hot-brewed sage chilled over ice can taste flat and medicinal, while cold extraction keeps the flavor clean, fragrant, and gently savory—exactly what you want in a thirst-quenching glass.

Serve tall over plenty of ice with extra grapefruit slices and a sprig of fresh sage. It's caffeine-free, so it's an all-day refresher. Because sage naturally contains thujone, keep the brew moderate and skip high or prolonged doses during pregnancy, breastfeeding, or epilepsy.

Ingredients

  • 3 tbsp dried sage leaves or 4 sage tea bags
  • 4 cups cold water
  • 1 grapefruit (half juiced, half sliced)
  • 2 tbsp honey or agave
  • Fresh sage sprigs for garnish
  • Plenty of ice

How to make it

  1. 1Place the sage and the grapefruit slices in a pitcher of cold water. Refrigerate 8–12 hours.
  2. 2Strain through a fine sieve, pressing gently, and discard the solids.
  3. 3Stir in the grapefruit juice and honey or agave until dissolved.
  4. 4Serve over plenty of ice, garnished with fresh grapefruit slices and a sage sprig.
