Lemongrass Gin Cooler (with Mocktail Variant)

Ingredients
- 60 ml gin (or omit for the mocktail)
- 2 tbsp dried lemongrass (or 2 lemongrass tea bags) for infusing
- 30 ml fresh lime juice
- 15 ml honey syrup (equal parts honey and warm water)
- Soda water, to top
- 1 lemongrass stalk, bruised, to garnish
- Lime wheel, to garnish
- Ice cubes
How to make it
- 1Infuse the gin: add the lemongrass to the gin in a sealed jar and let it steep 1–2 hours, then strain. (For the mocktail, instead brew a strong, chilled lemongrass tea using the same lemongrass and 60 ml water.)
- 2Add the lemongrass-infused gin (or chilled lemongrass tea), lime juice, and honey syrup to a shaker with ice. Shake well, about 15 seconds.
- 3Strain into a tall glass filled with fresh ice.
- 4Top with soda water and stir gently to combine.
- 5Garnish with a bruised lemongrass stalk and a lime wheel, and serve.
