Ingredients

  • 3 tbsp dried lemongrass (or 3 lemongrass tea bags)
  • 4 cups cold water
  • Juice of 2 limes
  • 2 tbsp honey or agave
  • Handful of fresh mint leaves
  • Lime wheels, to garnish
  • Ice cubes

How to make it

  1. 1Cold-brew: place the lemongrass in a jar or pitcher, add the cold water, cover, and refrigerate 8–12 hours.
  2. 2Strain out the lemongrass through a fine sieve, pressing gently to extract flavor.
  3. 3Stir in the lime juice and honey or agave until dissolved.
  4. 4Lightly muddle a few mint leaves in the bottom of each glass.
  5. 5Fill the glasses with ice, pour over the lemongrass limeade, and garnish with lime wheels and mint sprigs.
