Alishan oolong is at its most rewarding brewed gongfu-style, in a small pot with many short infusions, and the ritual itself is part of the wellness. Slowing down to watch the jade pellets unfurl and to savor each fragrant cup turns tea-making into a calming, mindful practice.

As an oolong, Alishan offers a moderate dose of caffeine paired with L-theanine, the combination associated with calm, clear-headed focus. Sipped slowly across several small cups, it provides gentle, even energy without any jittery edge—ideal for a thoughtful afternoon.

The method is simple but attentive: a generous amount of leaf, water just off the boil at around 90°C, and short steeps that grow a little longer with each round. Each infusion reveals a slightly different facet—first floral and creamy, later sweeter and rounder.

There is nothing to add and nothing to rush. Alishan's natural creamy, buttery sweetness carries the whole session on its own, and the unhurried rhythm of pouring and sipping is exactly what makes this such a grounding, restorative ritual.

Ingredients

  • 5 g Alishan oolong leaves (about 2 tbsp)
  • Water at around 90°C
  • A small teapot or gaiwan (about 120 ml)
  • Small cups for serving

How to make it

  1. 1Warm the pot or gaiwan with hot water, then discard it. Add the Alishan leaves.
  2. 2Pour in water just off the boil (around 90°C) to cover the leaves and steep the first infusion for about 30 seconds.
  3. 3Pour the tea into small cups and sip slowly, savoring the creamy floral aroma.
  4. 4Re-steep the same leaves five or six more times, adding 10–15 seconds to each infusion, and enjoy how the flavor evolves.
