Cold-Brew Alishan with Osmanthus and Honey

Cold-brewing brings out the very best in Alishan. The slow, cold extraction coaxes out all of the tea's creamy sweetness and floral fragrance while leaving any astringency behind, giving an iced tea that is impossibly smooth and naturally sweet.
A few osmanthus blossoms steeped alongside the leaves add a delicate apricot-floral note that harmonizes beautifully with Alishan's own creamy, floral character. The two fragrances layer together into something elegant and gently perfumed.
Patience does all the work: simply steep the leaves and blossoms in cold water in the fridge overnight. There's no heat to manage and no bitterness to worry about, and the result is far smoother than anything you could brew hot and chill.

- 4 cups cold water

How to make it

- 2Cover and refrigerate for 8 to 12 hours.
- 3Strain out the leaves and blossoms. Stir in a little honey if desired, though the tea is naturally sweet.
