Cold-Brew Rou Gui with Honey and Orange

Cold-brewed Rou Gui turns smooth and softly sweet, with the cassia spice and roast mellowing into a refreshing iced oolong brightened by orange and honey.

Cold-brewing is a beautiful way to meet Rou Gui from a different angle. Long, cold extraction softens the roast and tames any sharpness, drawing out a smooth, mellow cup where the cassia spice becomes a gentle background warmth rather than a bold front note.

The result is a clean, lightly sweet iced oolong with a lingering mineral finish — the rock rhyme survives the chill and gives the drink an elegant, grounded backbone. A little orange and honey round it out without masking the tea.

Patience is the only real ingredient: combine the leaves and cold water and let them sit in the fridge overnight. Cold extraction pulls the pleasant, aromatic notes while leaving harsh tannins behind, so the brew stays smooth even after a long steep.

Serve it over ice on a warm afternoon when you want something refreshing that still has depth and character. It is a lovely way to enjoy a roasted oolong without the heat of a hot cup, while keeping its gentle, sustained lift.

Ingredients

  • 2 tbsp Rou Gui oolong leaves (about 8–10 g)
  • 750 ml cold filtered water
  • 2 thin orange slices
  • 1–2 tsp honey, to taste
  • Ice cubes
  • Orange wheel and a sprig of mint, to garnish

How to make it

  1. 1Place the Rou Gui leaves and orange slices in a jar or pitcher and pour in the cold water.
  2. 2Cover and refrigerate 8–12 hours (overnight is ideal).
  3. 3Strain out the leaves and orange. Stir in honey until dissolved, adjusting to taste.
  4. 4Fill glasses with ice, pour over the cold-brew, and garnish with an orange wheel and mint.
