Zhu Ye Qing Pear Spritz
A light, bamboo-green spritz built on Zhu Ye Qing syrup, pear, and soda — bright and low-proof, with a fully non-alcoholic version that loses none of the character.
Zhu Ye Qing's smooth, chestnut-sweet profile makes a wonderful syrup base for a low-intervention spritz — light enough to sip on a warm evening, with the tea's character staying front and center rather than being buried under spirits.
A concentrated Zhu Ye Qing simple syrup, made by steeping the leaves in warm sugar water, captures the tea's sweetness and aroma in a form that mixes easily and keeps well in the fridge for future drinks.
For the spirited version, a small measure of a light, floral gin or a delicate white vermouth lets the tea syrup and fresh pear juice lead, with soda water on top for lift and effervescence. Build it long and pale, not strong and boozy.
For a non-alcoholic mocktail, simply swap the gin or vermouth for an extra splash of pear juice and a few drops of fresh lemon, then top with soda water the same way — the tea syrup carries plenty of character on its own, so nothing is lost by leaving the alcohol out. This makes the drink easy to batch for guests regardless of whether they're drinking.
Ingredients
- 30ml Zhu Ye Qing simple syrup (4g leaves steeped 10 min in 100ml hot 1:1 sugar-water syrup, then strained and cooled)
- 45ml fresh pear juice
- 15ml light, floral gin or delicate white vermouth (omit for mocktail; add extra 15ml pear juice + few drops lemon juice instead)
- 10ml fresh lemon juice
- Soda water, to top
- Ice
- Thin pear slice and a small mint sprig, for garnish
How to make it
- 1Make the Zhu Ye Qing syrup ahead: steep leaves in warm 1:1 sugar-water syrup for 10 minutes, strain, and chill.
- 2Fill a tall glass with ice. Add the Zhu Ye Qing syrup, pear juice, lemon juice, and gin or vermouth (or the mocktail substitution).
- 3Stir gently to combine.
- 4Top with soda water and stir once more, lightly.
- 5Garnish with a thin pear slice and a small sprig of mint. Serve immediately.
