Iced Zhu Ye Qing with Pear and Mint

- 500ml cold filtered water
- 1/2 ripe pear, thinly sliced
- 8–10 fresh mint leaves, plus extra for garnish
- 1 tbsp honey or light simple syrup (optional)
- Ice cubes
How to make it
- 1Combine the Zhu Ye Qing leaves, cold water, and pear slices in a pitcher or jar.
- 2Cover and refrigerate for 6–8 hours, or overnight, to cold-brew.
- 3Strain out the leaves and pear. Stir in honey or syrup if using, until dissolved.
- 4Fill glasses with ice, pour the cold-brewed tea over the top, and garnish with fresh mint leaves and a thin pear slice.
