
Hibiscus-Glazed Roasted Beet Salad

Ingredients
- 4 medium beets, peeled and cut into wedges
- 2 cups strong brewed hibiscus tea
- 2 tbsp honey
- 1 tbsp balsamic vinegar
- 4 cups arugula
- 100g feta cheese, crumbled
- 1/4 cup shelled pistachios, roughly chopped
- 2 tbsp olive oil
- 1 tbsp fresh orange juice
- Salt and pepper
How to make it
- 1Preheat oven to 200°C (400°F). Toss beet wedges with 1 tbsp olive oil, salt, and pepper. Roast on a baking sheet for 30 minutes until tender.
- 2While beets roast, simmer hibiscus tea, honey, and balsamic vinegar in a small saucepan over medium heat. Reduce to about 1/3 cup (15–20 minutes) until syrupy.
- 3Remove beets from oven and toss with the hibiscus glaze while still hot. Let cool 5 minutes.
- 4Whisk remaining olive oil with orange juice, a pinch of salt, and pepper to make the vinaigrette.
- 5Arrange arugula on a platter. Top with glazed beets, crumbled feta, and pistachios.
- 6Drizzle with orange vinaigrette. Serve at room temperature.
