Tila-Poached Chicken with Honey-Lemon Glaze

Ingredients

  • 2 boneless, skinless chicken breasts
  • 3 cups brewed tila tea (strong, using 4 tea bags)
  • 2 tbsp honey

  • 2 sprigs fresh thyme
  • 1 bay leaf
  • 2 tbsp olive oil
  • Salt and pepper

How to make it

  1. 1Brew strong tila tea with 4 bags in 3 cups of hot water. Steep 10 minutes, then remove bags.
  2. 2Pour tea into a wide saucepan. Add garlic, thyme, bay leaf, 1 tbsp honey, and lemon zest. Bring to a gentle simmer.
  3. 3Season chicken with salt and pepper. Add to the poaching liquid, cover, and cook on low for 18–20 minutes until cooked through.
  4. 4Remove chicken and rest on a cutting board. Strain poaching liquid, return to pan, and reduce over high heat to about 1/3 cup.
  5. 5Whisk in remaining 1 tbsp honey, lemon juice, and olive oil to make the glaze.
  6. 6Slice chicken and drizzle with the tila-honey glaze. Serve over couscous or rice with fresh herbs.
