Lemon balm and gin are a natural pairing—both are deeply herbal and aromatic, and the tea's gentle citrus rounds out gin's juniper edge into something beautifully balanced.
Infusing gin with dried lemon balm for just two hours gives it a pale golden tint and a fragrant, lemony-herbal aroma. Don't over-steep—the gin should taste enhanced, not grassy.
The egg white is optional but transforms the texture into something silky and cloud-like, with a gorgeous foam cap that holds the lemon balm garnish like a tiny green pillow.
For a mocktail version, skip the gin entirely—use the cold-brewed lemon balm tea with simple syrup, fresh lemon, and sparkling water. Just as elegant, completely alcohol-free.
Ingredients
- 60 ml gin
- 1 tbsp dried lemon balm (or 1 tea bag)
- 30 ml fresh lemon juice
- 15 ml simple syrup
- 1 egg white (optional)
- Sparkling water
- Fresh lemon balm leaves for garnish
- Ice cubes
How to make it
- 1Infuse gin: add dried lemon balm to gin in a sealed jar for 2 hours. Strain and discard herbs.
- 2Add infused gin, lemon juice, simple syrup, and egg white (if using) to a cocktail shaker. Dry shake (no ice) for 10 seconds to emulsify.
- 3Add ice to the shaker and shake vigorously for 15 seconds.
- 4Strain into a chilled coupe or highball glass with fresh ice.
- 5Top with sparkling water and garnish with fresh lemon balm leaves.
