Color-Changing Butterfly Pea Lemonade

Ingredients

- 2 cups hot water
- 3 tbsp sugar or honey (or to taste)
- 2 cups cold water
- Juice of 2–3 lemons
- Ice cubes
- Lemon wheels and mint, to garnish
How to make it
- 1Steep the butterfly pea flowers in 2 cups hot water for 8–10 minutes until deep blue, then strain out the flowers.
- 2Stir the sugar or honey into the warm blue tea until fully dissolved, then mix in the 2 cups cold water and chill.
- 3Fill tall glasses with ice and pour in the chilled blue tea.
- 4At the moment of serving, slowly add the fresh lemon juice and watch the blue turn purple and pink.
- 5Garnish with lemon wheels and mint, and offer extra lemon on the side to deepen the color.
