Iced Cedrón Mint Refresher

Cold-brewed cedrón with fresh mint, cucumber, and a splash of lime—a spa-water-grade iced refresher that's clean, herbal, and absurdly refreshing.

Cedrón's natural lemon character makes it the perfect base for an iced drink that doesn't need any actual lemon to taste lemony. The cold extraction softens its herbal edge and pulls forward the candied-citrus notes, giving you a base that's almost dessert-like in its sweetness.

Mint and cucumber complete the picture. The mint adds a cooling secondary aromatic, while thin cucumber ribbons make the drink taste cleaner than water itself. Together they push cedrón into proper summer-refresher territory.

Cold-brew the cedrón overnight in a glass pitcher with the leaves loose so they can dance freely in the water. Once strained, the liquid should be a pale gold-green and aggressively aromatic. If you used dried leaves, double the quantity.

Serve in tall glasses over plenty of ice with cucumber ribbons and mint sprigs floating. A small squeeze of fresh lime at the end deepens the citrus profile without making it sour—the lime peel oil is what you want, not the juice. This is the drink to keep in a jug all summer.

Ingredients

  • 1/2 cup fresh cedrón leaves (or 1/4 cup dried)
  • 4 cups cold water
  • 1/2 small cucumber, sliced into thin ribbons
  • 1 large handful fresh mint leaves
  • Juice of 1 lime
  • 2 tbsp simple syrup or honey syrup (optional)
  • Ice cubes
  • Cucumber slices and mint sprigs for garnish

How to make it

  1. 1Cold-brew: place cedrón leaves in cold water along with half the cucumber ribbons and half the mint. Refrigerate 8–12 hours.
  2. 2Strain through a fine sieve into a clean pitcher, pressing gently to extract liquid.
  3. 3Stir in the fresh lime juice and optional syrup. Taste and adjust sweetness.
  4. 4Fill tall glasses with ice. Pour the cedrón refresher over the ice.
  5. 5Garnish each glass with fresh cucumber slices and a mint sprig. Serve immediately.
