Phoenix Floral Gin Cocktail

Dan Cong's wild floral and stone-fruit aromatics ask for a spirit that won't overpower them, and a clean London Dry gin is exactly that. The juniper backbone gives structure while leaving plenty of room for the tea's orchid-honey notes to bloom.
Rather than infusing the gin (which can pull out tannins and dull the freshness), this cocktail uses a strong Dan Cong cold brew. Cold-brewing for 4 hours at room temperature gives a clear, intensely aromatic concentrate without any of the bitterness that hot extraction risks.
A splash of dry vermouth would be too dry; instead, lean on honey syrup and a tiny twist of grapefruit peel to mirror the tea's natural fruit-citrus undertones. The drink ends up tasting like a flower garden in early summer—light, bright, complicated.
Mocktail variant: replace the gin with a teaspoon of juniper berries muddled into the Dan Cong cold brew during brewing, then strain. Shake with honey syrup, lemon, and ice exactly as below, and top with tonic water. You get the same botanical complexity, zero alcohol.
Ingredients
- 60 ml London Dry gin
- 45 ml strong Dan Cong cold brew concentrate
- 10 ml fresh lemon juice
- 10 ml honey syrup (1:1 honey and warm water)
- 1 grapefruit peel twist
- 1 small edible orchid or osmanthus blossom (optional garnish)
- Ice cubes
How to make it
- 1Make the cold brew concentrate ahead: steep 6 g Dan Cong in 100 ml cold water at room temperature for 4 hours, then strain.
- 2Add gin, cold brew, lemon juice, and honey syrup to a cocktail shaker with ice.
- 3Shake gently for 8 seconds (you want to chill, not aerate—delicate aromatics fade with too much shaking).
- 4Double-strain into a chilled coupe glass.
- 5Express the grapefruit peel over the surface, rub it around the rim, then drop in. Garnish with an edible flower if using.
