Because rosemary is naturally caffeine-free and traditionally associated with calm, clear-headed focus rather than a buzz, this slot skips alcohol entirely and instead builds a genuinely sophisticated mocktail that earns its place at a dinner table or evening gathering.

A homemade rosemary-honey syrup is the backbone: simmering rosemary with honey and water concentrates its piney aroma into something syrupy and fragrant, far more complex than a plain simple syrup would be.

Fresh lime juice and a generous pour of sparkling water keep the drink light and effervescent, while the rosemary syrup and a few cracked black peppercorns give it a savory, almost botanical-gin-like quality without any actual spirits.

Ingredients

  • 1 cup strong-brewed rosemary tea, cooled (2 tea bags steeped 6 minutes)
  • 1/2 cup honey
  • 1 fresh rosemary sprig, plus extra for garnish
  • 60 ml fresh lime juice (about 2 limes)
  • 120 ml sparkling water
  • 2 cracked black peppercorns (optional)
  • Ice cubes
  • Lime wheel for garnish

How to make it

  1. 1Make the rosemary-honey syrup: combine the strong-brewed rosemary tea, honey, and a fresh rosemary sprig in a small saucepan. Simmer over low heat for 5 minutes, then let cool and strain.
  2. 2Fill a tall glass with ice. Add 30 ml of the rosemary-honey syrup and the fresh lime juice.
  3. 3Stir well, then top with sparkling water.
  4. 4Add the cracked peppercorns if using, and stir gently once more.
  5. 5Garnish with a fresh rosemary sprig and a lime wheel. Serve immediately while fizzy.
