Bancha Yuzu Spritz Mocktail

A gentle, alcohol-free spritz built on cooled bancha and bright yuzu — a sophisticated, low-stimulation sipper for evenings when you want a ritual without the buzz.

Bancha's quiet, low-caffeine, low-bitterness character makes it a natural fit for a non-alcoholic evening drink rather than a boozy cocktail — its whole appeal is the opposite of intensity. Instead of trying to force it into a strong spirit-forward cocktail, this mocktail leans into what bancha already does best: a calm, comforting backdrop for brighter flavors.

Yuzu is the perfect partner here. Its sharp, floral citrus character wakes up bancha's mellow base without overwhelming it, the same balancing act bancha plays with savory food at the dinner table, just translated into a glass. If you can't find yuzu juice, a mix of lime and a little orange juice gets reasonably close.

A splash of sparkling water turns this into a proper spritz — light, bubbly, and easy to sip slowly over a long evening, which suits bancha's unhurried, anytime character far better than something stronger would.

This is the mocktail slot for this tea: bancha is naturally calming and very low in caffeine, so rather than building a spirit-forward cocktail, this recipe is intentionally alcohol-free from the start, making it equally appropriate for a relaxed evening or an afternoon when you want something a little festive without any alcohol or much caffeine at all.

Ingredients

  • 1 cup brewed bancha, cooled completely
  • 30 ml yuzu juice (or 20 ml lime juice + 10 ml orange juice)
  • 1 tbsp honey syrup (1:1 honey and warm water, cooled)
  • 1/2 cup chilled sparkling water
  • Ice cubes
  • Lemon twist or yuzu peel, for garnish

How to make it

  1. 1Brew bancha at normal strength, then chill completely in the refrigerator (or brew ahead and keep cold).
  2. 2Fill a wine glass or highball glass with ice.
  3. 3Combine cooled bancha, yuzu juice, and honey syrup in the glass and stir gently.
  4. 4Top with chilled sparkling water and stir once more, lightly.
  5. 5Garnish with a lemon twist or a sliver of yuzu peel and serve immediately.
