Nuwara Eliya Tea and Honey Panna Cotta

Panna cotta is one of the best desserts for showcasing a delicate tea like Nuwara Eliya, because it relies on a neutral, creamy canvas rather than competing flavors. Steeping the tea directly in warm cream lets its floral, faintly fruity aroma infuse the dessert without any bitterness creeping in.
The key is keeping the steeping time short and the cream just below a simmer — Nuwara Eliya is delicate enough that over-extraction will pull out tannins that don't belong in a dessert this gentle. A light hand with honey, rather than refined sugar, echoes the tea's own subtle sweetness instead of masking it.
Unlike heavier black teas that need bold partners like chocolate or caramel, Nuwara Eliya wants almost nothing competing with it. A few fresh berries or a thin honey drizzle on top is plenty — anything more elaborate starts to bury the tea's perfume.

Ingredients
- 2 cups heavy cream
- 1/2 cup whole milk
- 3 tbsp loose-leaf Nuwara Eliya tea (or 4 tea bags)
- 3 tbsp honey
- 2 tsp powdered gelatin
- 3 tbsp cold water
- 1/4 tsp vanilla extract
- Fresh berries for garnish
- Extra honey for drizzling
How to make it
- 1Sprinkle gelatin over the cold water in a small bowl and let it bloom for 5–10 minutes.
- 2Heat the cream and milk in a saucepan until just steaming (do not boil). Remove from heat, add the tea, and steep for 4 minutes.
- 3Strain out the tea leaves, then gently reheat the infused cream until warm. Whisk in the honey and vanilla.
- 4Add the bloomed gelatin to the warm cream mixture and whisk until fully dissolved.
- 5Divide among 4 small cups or ramekins. Refrigerate for at least 4 hours, or until fully set.
- 6Serve chilled, topped with fresh berries and a light drizzle of honey.
