Star Anise Spiced Mocktail
A non-alcoholic, warmly spiced mocktail built on a star anise tea reduction with pear juice, lime, and soda — all the cozy ritual of a spiced cocktail, no alcohol needed.
Because star anise tea is fully caffeine-free and naturally calming, this slot leans into a non-alcoholic mocktail rather than a traditional cocktail — it fits the same evening wind-down ritual as the rest of this tea's drink lineup.
A concentrated star anise tea reduction is the backbone of the drink, delivering bold licorice-spice flavor in just a couple of tablespoons without diluting the glass. Reducing it with a little sugar turns it into a syrup you can keep on hand for multiple drinks.
Pear juice is the ideal mixer — its soft, mellow sweetness complements star anise far better than something sharper like cranberry, and the combination tastes like a warm dessert turned into a refreshing drink.
Top with soda water for effervescence and lift, and a squeeze of lime to keep the sweetness in check. Serve in a nice glass with a star anise pod floating on top — the visual alone makes it feel like an occasion, no alcohol required.
Ingredients
- 4 whole star anise pods
- 1 cup water
- 3 tbsp sugar
- 1/2 cup pear juice
- 1 tbsp fresh lime juice
- 1/2 cup soda water
- Ice cubes
- 1 star anise pod, for garnish
How to make it
- 1Make the star anise syrup: simmer star anise pods, water, and sugar in a small saucepan over medium heat for 10 minutes, until reduced by about half and syrupy. Strain and let cool.
- 2Fill a glass with ice. Add 2 tbsp of the star anise syrup, pear juice, and lime juice.
- 3Stir well to combine, then top with soda water.
- 4Give it one gentle stir to mix the soda in without losing the fizz. Garnish with a whole star anise pod floating on top.
