Moonlight White Plum & Honey Bedtime Mocktail

Because Moonlight White is such a gentle, wind-down tea, this recipe is built first and foremost as a soothing, alcohol-free bedtime mocktail. Strong-brewed Moonlight White is chilled and shaken with plum, honey, and a little lemon, then softened with calming chamomile for a fragrant, restful drink to enjoy in the evening.
Brew the tea concentrated but never bitter—use a generous spoonful of leaf and a moderate steep just below boiling. This gives the mocktail real body and a deep honeyed sweetness that carries through even when chilled and diluted with ice.
For the non-alcoholic bedtime version, shake the chilled Moonlight White with plum purée, honey syrup, and lemon, then top with a splash of still or lightly sparkling water and a cooled chamomile infusion. It is naturally low in caffeine and meant to help you ease toward sleep, not wake you up.

Ingredients
- 120 ml strong Moonlight White tea, chilled (2 tsp leaf in 120 ml water)
- 1 ripe plum, pitted and mashed (or 2 tbsp plum purée)
- 1 chamomile tea bag, brewed in 60 ml water and cooled
- 1 tbsp honey syrup (honey dissolved in equal warm water)
- 1 tsp fresh lemon juice
- Still or lightly sparkling water, to top
- Ice cubes
- Plum slice and a small sprig of mint, to garnish
- Optional (adults only): 30 ml plum liqueur or dry sparkling wine
How to make it
- 1Brew the Moonlight White strong (around 85°C, 4 minutes), strain, and chill. Brew the chamomile separately and cool it.
- 2In a shaker, combine the chilled Moonlight White, mashed plum, honey syrup, lemon juice, and cooled chamomile. Add ice.
- 3Shake gently for about 10 seconds, then strain into a chilled glass over fresh ice.
- 4Top with still or lightly sparkling water (for the adults-only version, add the plum liqueur or sparkling wine instead). Garnish with a plum slice and mint, and sip slowly before bed.
