Pai Mu Tan Ginger-Honey Calm Tonic

Pai Mu Tan white tea meets fresh ginger and raw honey in a gentle, antioxidant-rich tonic that calms the mind and soothes the body.

Pai Mu Tan is one of the least processed teas on earth, which means it's packed with antioxidants and L-theanine—the amino acid responsible for that calm, focused feeling. This tonic leans into that natural serenity.

Fresh ginger adds gentle digestive warmth without overpowering the tea's delicate hay-like character. Grate it fine so it releases its oils quickly and evenly into the brew.

Raw honey stirred in at the end (never into boiling water) preserves its enzymes and adds a floral sweetness that feels like it was always meant to be part of this tea.

Sip this slowly in the evening or during a mid-afternoon pause. It's caffeine-light enough to drink later in the day, and the combination of L-theanine and ginger creates a grounding calm that's perfect for winding down.

Ingredients

  • 1 tbsp Pai Mu Tan loose leaf tea
  • 1 cup hot water (80°C)
  • 1/2 inch fresh ginger, finely grated
  • 1 tbsp raw honey
  • Thin lemon slice (optional)

How to make it

  1. 1Heat water to 80°C (below boiling—white tea is delicate). Pour over tea leaves and steep 4 minutes.
  2. 2Strain tea into a cup. Add grated ginger and stir gently.
  3. 3Let cool 2 minutes until warm but not hot. Stir in raw honey.
  4. 4Add a thin lemon slice if desired. Sip slowly and enjoy.
