Caffeine-Free Rooibos Chai Latte

A rooibos chai latte is the ultimate cozy wellness drink. Built on caffeine-free rooibos and the classic chai spices—cinnamon, ginger, cardamom, and clove—it gives you all the warmth and comfort of a chai latte without anything to disturb your sleep, so you can enjoy one at any hour.

The rooibos base does a lot of the work. Its naturally honeyed, slightly woody sweetness means the latte needs little added sugar, and it blends seamlessly with steamed milk into something smooth, creamy, and soothing.

The key is brewing the rooibos chai strong, almost like a concentrate, so the spices and rooibos come through clearly once the milk is added. Steep it longer than you would a black tea—rooibos won't turn bitter, so it can take 7–8 minutes to develop full flavor.

Froth or steam your milk of choice (dairy or oat both work beautifully) and pour it over the spiced rooibos concentrate. Dust with cinnamon and enjoy as a calming morning ritual, an afternoon pick-me-up, or a caffeine-free wind-down before bed.

Ingredients

  • 2 rooibos chai tea bags (or 2 tbsp loose blend)
  • 1/2 cup water
  • 1 cup milk (dairy or oat)
  • 1 tsp honey or maple syrup (optional)
  • Pinch of ground cinnamon, to dust

How to make it

  3. 3Heat and froth the milk until steaming and foamy.
  4. 4Pour the spiced rooibos concentrate into a mug, stir in honey or maple syrup if using, then top with the steamed milk and dust with cinnamon.
