Guayusa Amazon Spritz (with Mocktail Version)

Ingredients
- 60 ml white rum
- 2 tbsp guayusa loose leaf (for infusing the rum)
- 90 ml chilled strong guayusa tea
- 25 ml fresh lime juice
- 15 ml agave syrup
- Sparkling water, to top
- Lime wheel and mint to garnish
- For the mocktail: omit the rum and use extra chilled guayusa tea
How to make it
- 1Infuse the rum: add the guayusa loose leaf to the rum in a sealed jar and steep for 90 minutes, then strain.
- 2Brew the strong guayusa tea separately and chill it thoroughly.
- 3Fill a tall glass with ice and pour in the infused rum, chilled guayusa tea, lime juice, and agave.
- 4Top with sparkling water and stir once gently.
- 5Garnish with a lime wheel and a sprig of mint.
- 6For the mocktail: leave out the rum, increase the chilled guayusa tea to 120 ml, and build the same way over ice.
