Iced Jin Jun Mei with Peach and Honey

Ingredients

  • 2 tbsp Jin Jun Mei loose-leaf tea
  • 3 cups cold water
  • 1 ripe peach, sliced
  • 1–2 tbsp honey, to taste
  • Fresh mint leaves
  • Ice cubes

How to make it

  1. 1Place the Jin Jun Mei leaves and half of the peach slices in a jar. Pour in the cold water.
  2. 2Cover and refrigerate for 8–12 hours to cold-brew.
  3. 3Strain through a fine sieve, then stir in honey to taste until dissolved.
  4. 4Fill glasses with ice, pour over the cold brew, and garnish with the remaining peach slices and fresh mint.
