Jin Jun Mei Honey and Ginger Morning Tonic

Jin Jun Mei is a wonderfully smooth black tea, traditionally enjoyed in the morning for a calm, steady lift. This tonic keeps the cup gentle by leaning into the tea's natural honey and malt notes, warmed with a little fresh ginger and brightened by lemon.
Because Jin Jun Mei is made only from tender buds, it brews sweet and low in bitterness, so it stands up to ginger and citrus without turning sharp. The combination feels comforting and clean, ideal for easing into a productive morning.
Brew the tea gently—around 90°C for two to three minutes—to preserve its delicate aroma. Over-steeping can mute the honeyed character you want at the heart of the drink, so keep it light and stop while it is still fragrant.

Ingredients
- 2 tsp Jin Jun Mei loose-leaf tea (or 1 tea bag)
- 1 1/2 cups hot water (90°C)
- 3 thin slices fresh ginger
- 1 tbsp honey
- Squeeze of fresh lemon
- Pinch of cinnamon (optional)
How to make it
- 1Place the Jin Jun Mei leaves and ginger slices in a teapot or large cup.
- 2Pour the hot water over them and steep for 2–3 minutes, then strain out the leaves and ginger.
- 3Stir in the honey while the tea is still warm until fully dissolved.
- 4Finish with a squeeze of lemon and a pinch of cinnamon if you like. Serve warm.
