Lady Grey Gin Fizz

Lady Grey-infused gin shaken with lemon and honey into a bright, aromatic fizz—plus a zero-proof citrus version for an equally elegant alcohol-free option.

Lady Grey and gin are natural partners: both lean on citrus and botanicals, so infusing gin with the tea simply amplifies what's already there. The result is a spirit with a soft bergamot perfume and bright citrus edge, ideal for a refreshing, aromatic fizz.

Infusion is quick and forgiving. Steeping the tea in gin for just a couple of hours gives a fragrant, pale-gold spirit; any longer and the tannins can turn it dry, so taste as you go and strain once the bergamot really sings.

Built into a fizz with fresh lemon, a little honey syrup, and a long top of soda, the infused gin becomes elegant and easy-drinking. The bubbles carry the bergamot aroma upward, making every sip as fragrant as it is refreshing.

For a non-alcoholic mocktail, skip the gin and build the drink on strong, chilled Lady Grey instead: shake the cold tea with lemon juice and honey syrup, pour over ice, and top with soda water. Garnish with a lemon twist and you have the same bright, perfumed fizz—elegant enough for any toast, with zero proof.

Ingredients

  • 45 ml Lady Grey-infused gin (see step 1)
  • 2 Lady Grey tea bags (for infusing 200 ml gin)
  • 25 ml fresh lemon juice
  • 15 ml honey syrup (equal parts honey and warm water)
  • Soda water, to top
  • Ice cubes
  • Lemon twist and a few cornflower petals to garnish

How to make it

  1. 1Infuse the gin: add the tea bags to 200 ml gin in a sealed jar and steep for 2 hours, tasting until fragrant. Remove the bags and squeeze gently.
  2. 2Add 45 ml of the infused gin, the lemon juice, and the honey syrup to a shaker with ice. Shake well for 15 seconds.
  3. 3Strain into an ice-filled highball glass.
  4. 4Top with soda water, stir once, and garnish with a lemon twist and cornflower petals. (For the mocktail: replace the gin with 60 ml strong chilled Lady Grey and proceed the same way.)
