Osmanthus Oolong Spritz

A delicate, low-ABV spritz built on osmanthus oolong syrup, sparkling wine, and soda — with an easy non-alcoholic mocktail version for the same honeyed, floral effect.

Osmanthus oolong's honeyed, apricot-floral character makes a beautiful syrup base for a light spritz, the kind of drink built to sip slowly rather than knock back. Reducing a strong brew of the tea with a little sugar concentrates its fragrance into something that holds its own against sparkling wine without disappearing.

Keep the alcohol light here — a dry sparkling wine like Cava or Prosecco, topped generously with soda water, lets the osmanthus syrup stay the star of the show rather than getting buried under booze. A splash of fresh lemon juice keeps the whole thing from tipping into syrupy sweetness.

Because the tea base has some caffeine, this is best enjoyed earlier in the evening rather than right before bed; for a daytime gathering, it also looks beautiful served in a wine glass with a few whole dried osmanthus blossoms floating on top.

For a non-alcoholic mocktail version, simply skip the sparkling wine and double the soda water, or use a non-alcoholic sparkling wine alternative — the osmanthus oolong syrup, lemon, and bubbles deliver nearly all of the same celebratory, floral effect without any alcohol at all.

Ingredients

  • 2 tbsp osmanthus oolong leaves
  • 1/2 cup hot water (90°C), for the syrup
  • 1/4 cup sugar
  • 60 ml dry sparkling wine (Cava or Prosecco), or non-alcoholic sparkling wine for the mocktail version
  • Juice of 1/2 lemon
  • Soda water, to top
  • Ice cubes
  • Dried osmanthus blossoms and a lemon twist, for garnish

How to make it

  1. 1Brew the osmanthus oolong leaves in the hot water for 5 minutes to make a strong, concentrated tea. Strain out the leaves.
  2. 2Return the tea to low heat, stir in the sugar, and simmer gently for 3–4 minutes until slightly reduced into a light syrup. Let cool completely.
  3. 3Fill a wine glass with ice. Add 30 ml of the osmanthus oolong syrup and the lemon juice.
  4. 4Top with sparkling wine (or non-alcoholic sparkling wine for the mocktail), then top further with soda water to taste.
  5. 5Stir gently once, and garnish with a few dried osmanthus blossoms and a lemon twist.
