Iced Osmanthus Oolong with Peach and Lime

Cold-brewing is the best way to showcase osmanthus oolong's fragrance without any bitterness, since the long, gentle extraction pulls out the tea's natural sweetness and floral aroma while leaving harsher tannins behind.
Peach is the obvious fruit partner here — its own honeyed, slightly tart profile echoes the apricot-like character that osmanthus brings to the leaf, so the two flavors blend rather than compete. Fresh, ripe peach slices steeped right in the cold brew work best, but frozen peach slices are a fine substitute outside of peak season.
A squeeze of lime at the end is essential — it brightens what would otherwise be an entirely soft, rounded drink and keeps it refreshing rather than cloying, especially on a hot afternoon.
