Matcha Oat Milk Latte with Collagen and Honey

Ceremonial matcha whisked smooth with hot water, then poured with warm oat milk, collagen peptides and a touch of honey: creamy, grassy and bright green.

Matcha is the one tea where you drink the leaf itself rather than water that passed through it, which is why a small teaspoon of powder sits at level 3 of our caffeine scale — the top rung. It also carries L-theanine, the amino acid that gives shade-grown Japanese teas their savory, umami edge; here that edge is what keeps the latte from tasting like sweet milk. The collagen peptides are there because a lot of people already stir them into a morning drink: unflavored, they dissolve into warm oat milk without changing the taste, so this is a convenient place to put them.

The key is whisking the matcha properly. Use a bamboo chasen or a small electric frother to create a smooth, lump-free base before adding the milk. This step makes the difference between a silky latte and a gritty disappointment.

Oat milk's natural sweetness and creamy body make it the ideal pairing for matcha—it softens the tea's slight bitterness while maintaining that gorgeous green color. Avoid milks with strong flavors that compete with matcha's delicate umami.

Drink it in the morning, with or after breakfast rather than instead of it: at level 3 on our caffeine scale this is as strong a cup as anything in the catalogue, and the oat milk does not change that.

Ingredients

  • 1.5 tsp ceremonial-grade matcha powder
  • 2 tbsp hot water (80°C, not boiling)
  • 1 scoop collagen peptides (unflavored)
  • 1 cup oat milk, warmed
  • 1 tsp honey or maple syrup
  • Pinch of cinnamon (optional)

How to make it

  1. 1Sift matcha powder into a bowl or wide mug to remove lumps.
  2. 2Add 2 tbsp hot water (80°C). Whisk vigorously with a chasen or frother until a smooth, bright green paste forms with tiny bubbles.
  3. 3Dissolve collagen peptides in the warm oat milk, stirring until fully incorporated.
  4. 4Pour the collagen-oat milk slowly into the matcha paste, whisking as you pour to combine evenly.
  5. 5Stir in honey and a pinch of cinnamon if desired. Serve immediately while warm and frothy.
