Ingredients

  • 1 pink grapefruit, segmented (white pith removed)
  • 2 oranges (navel or blood), segmented
  • 2 kiwis, peeled and sliced into half-moons
  • 300g full-fat plain Greek yogurt
  • 2 tbsp honey (plus extra for drizzling)
  • 1/2 tsp vanilla extract
  • Zest of 1/2 lemon
  • 8 fresh mint leaves, thinly sliced
  • 2 tbsp flaked almonds, lightly toasted
  • Pinch of flaky sea salt

How to make it

  1. 1Toast the flaked almonds in a dry pan over medium heat for 2–3 minutes, shaking constantly, until just golden. Set aside.
  2. 2In a bowl, mix Greek yogurt with 2 tbsp honey, vanilla, and lemon zest until smooth.
  3. 3Segment grapefruit and oranges by cutting off the peel with a sharp knife (removing all white pith), then sliding the knife along each membrane to release clean segments. Slice kiwis into half-moons.
  4. 4Divide honey-yogurt among 4 small bowls or glasses.
  5. 5Arrange citrus segments and kiwi over the yogurt in a casual pile.
