Shou Mei Honey Gin Fizz

A delicate, honeyed cocktail of Shou Mei-infused gin, lemon, and honey topped with soda—plus a non-alcoholic mocktail version anyone can enjoy.

Shou Mei's mellow, honeyed body makes it a lovely partner for a light gin fizz. Infusing gin with the white tea lends it soft fruity and floral notes, turning a simple highball into something fragrant and quietly elegant.

Keep the infusion short—white tea is delicate, and around an hour is enough to perfume the gin with Shou Mei's honeyed character. Longer steeping can pull out astringency that competes with the bright lemon and gentle sweetness.

Fresh lemon juice and a little honey syrup balance the tea-infused gin, while a generous top of chilled soda water lifts everything into a refreshing, easy-drinking fizz. A twist of lemon and a few mint leaves finish it beautifully.

For a non-alcoholic mocktail, skip the gin entirely: combine 90 ml of strong, chilled Shou Mei tea with the lemon juice and honey syrup in a shaker with ice, strain into a glass over fresh ice, and top with soda water. You get the same honeyed, fruity refreshment and the full ritual, without the alcohol—perfect for an alcohol-free evening.

Ingredients

  • 45 ml gin
  • 1 tbsp loose-leaf Shou Mei (for infusing the gin)
  • 90 ml strong brewed Shou Mei tea, chilled (for the mocktail version)
  • 20 ml fresh lemon juice
  • 15 ml honey syrup (equal parts honey and warm water)
  • Chilled soda water, to top
  • Lemon twist and fresh mint, to garnish
  • Ice cubes

How to make it

  1. 1Infuse the gin: add the Shou Mei leaves to the gin in a sealed jar and steep about 1 hour, then strain out the leaves.
  2. 2Add the Shou Mei-infused gin, lemon juice, and honey syrup to a shaker with ice. Shake until well chilled.
  3. 3Strain into a tall glass filled with fresh ice.
  4. 4Top with chilled soda water and stir gently once.
  5. 5Garnish with a lemon twist and fresh mint. For the mocktail, shake the 90 ml chilled Shou Mei tea with lemon juice and honey syrup over ice instead of the infused gin, strain over fresh ice, and top with soda water.
