Cold-Brew Shou Mei with Peach and Honey

Patience is the only real ingredient here. An overnight steep in the fridge does all the work, producing a clear, golden tea that needs little more than a touch of honey to round it out and a glass full of ice to finish.

Ingredients
- 2 tbsp loose-leaf Shou Mei
- 4 cups cold filtered water
- 1 ripe peach, sliced
- 1–2 tbsp honey, to taste
- Fresh mint sprigs
- Ice cubes
How to make it
- 1Place the Shou Mei and most of the peach slices in a large jar or pitcher.
- 2Pour over the cold water, cover, and refrigerate for 8–12 hours.
- 3Strain out the leaves and steeped peach, pressing gently to release flavor.
- 4Stir in honey to taste until dissolved.
- 5Fill tall glasses with ice, pour over the cold-brew, and garnish with fresh peach slices and mint.
