Iced Throat Coat Peach Cooler

A chilled, lightly thickened cooler that pairs cold-brewed Throat Coat Blend with peach and a touch of honey — a gentler, less sugary alternative to typical iced herbal teas.

Cold-brewing Throat Coat Blend produces a smoother, less assertively earthy result than hot-brewing and chilling, because the slow, low-temperature extraction draws out the mucilage and licorice sweetness without pulling forward any harsher bark notes from the slippery elm.

Peach is the natural fruit partner here — its soft, slightly honeyed flesh echoes the tea's own gentle sweetness rather than fighting it, and pureed peach adds a light natural thickness that plays well with the tea's already-silky body.

This cooler is intentionally low in added sugar, since both the licorice in the blend and the ripe peach bring their own sweetness. A small amount of honey ties everything together without making the drink cloying.

Serve over ice on a warm afternoon when you want something more soothing than a typical fruit-and-sugar iced tea — it has the same comforting, settling quality as the hot version, just refreshed for warmer weather.

Ingredients

  • 2 Throat Coat Blend tea bags (or 2 tbsp loose blend)
  • 3 cups cold water
  • 1 ripe peach, pitted and pureed (or 1/2 cup peach puree)
  • 2 tbsp honey
  • 1 tbsp fresh lemon juice
  • Ice cubes
  • Thin peach slices, for garnish
  • Fresh mint leaves, for garnish

How to make it

  1. 1Combine the tea bags or loose blend with cold water in a jar or pitcher. Cover and refrigerate for 8–10 hours.
  2. 2Strain the cold brew through a fine sieve, pressing gently to extract any remaining mucilage. Discard the solids.
  3. 3Whisk in the peach puree, honey, and lemon juice until fully combined.
  4. 4Fill glasses with ice and pour the cooler over the top. Garnish with peach slices and fresh mint, and serve immediately.
