
Rooibos Amaretto Sour
A twist on the classic Amaretto Sour using rooibos-infused bourbon, amaretto, and fresh lemon—nutty, sweet, and irresistibly smooth.
Rooibos and bourbon are a match made in heaven. The tea's natural vanilla, honey, and nutty notes amplify the caramel-oak character of bourbon, creating an infused spirit that tastes like it's been aged in a tea barrel.
Infuse the bourbon for just two hours—enough to pull the deep amber color and all that warm flavor without any bitterness. The resulting liquid is gorgeous on its own, but it truly shines in this cocktail.
Amaretto liqueur doubles down on the nutty theme, while fresh lemon juice and a dash of simple syrup keep everything balanced. The optional egg white creates a luxurious foam top that makes the drink feel special.
For a mocktail version, skip the bourbon and amaretto—use strong-brewed rooibos with a splash of orgeat (almond syrup), lemon juice, and a dash of orange bitters. Shake hard and serve over ice for a sophisticated zero-proof option.
Ingredients
- 60 ml bourbon
- 2 rooibos tea bags
- 30 ml amaretto liqueur
- 25 ml fresh lemon juice
- 15 ml simple syrup
- 1 egg white (optional, for foam)
- Lemon wheel and cherry for garnish
How to make it
- 1Infuse bourbon: add rooibos tea bags to bourbon in a sealed jar for 2 hours. Remove bags and squeeze gently.
- 2If using egg white, dry shake (no ice) all liquid ingredients vigorously for 15 seconds to build foam.
- 3Add ice to the shaker and shake again for another 15 seconds until well chilled.
- 4Strain into a rocks glass over fresh ice.
- 5Garnish with a lemon wheel and a cherry. Serve immediately.
