Rooibos with Ginger, Lemon and Honey
A caffeine-free cup of rooibos with fresh ginger, lemon, and raw honey: naturally sweet, lightly spicy, and good at any hour.
Rooibos gives this cup a naturally sweet, honeyed base with no caffeine at all, and it carries aspalathin and nothofagin, two compounds characteristic of the South African plant. Fresh ginger adds its spicy warmth on top; together they make an everyday drink you can pour at any hour.
The ginger simmers directly in the rooibos, releasing its spicy warmth into the tea's naturally sweet base. The result is a drink that feels like a warm hug—comforting but never overwhelming.
Raw honey is stirred in off the heat so its aroma is not cooked away, while a generous squeeze of lemon adds a bright, balancing acidity that lifts the whole cup.
Drink this first thing in the morning, before bed, or whenever you want a reset. Since rooibos is completely caffeine-free, there's no wrong time, and in the cold months the ginger and honey make it the mug people keep refilling.
Ingredients
- 1 rooibos tea bag or 2 tsp loose leaf
- 1 cup boiling water
- 1-inch piece fresh ginger, sliced thin
- 1 tbsp raw honey
- Juice of half a lemon
- Pinch of ground cinnamon (optional)
How to make it
- 1Place rooibos and ginger slices in a mug. Pour boiling water over them.
- 2Cover and steep for 7 minutes (rooibos won't turn bitter, so longer is fine).
- 3Remove tea bag or strain out leaves and ginger slices.
- 4Let cool 2 minutes, then stir in honey and lemon juice.
- 5Sprinkle with cinnamon if desired. Serve warm.
