This cocktail pairs a light tea concentrate with pear nectar, a touch of elderflower liqueur, and a splash of dry sparkling wine — building layers of soft sweetness rather than sharp citrus or bitter notes that would clash with the tea's gentle profile.

The tea concentrate is the foundation: brew it strong but not bitter, using a slightly shorter steep time at a careful temperature to avoid pulling out harshness. This concentrate carries the tea's nutty, honeyed character through the other ingredients without getting lost in the bubbles.

Pear nectar is the key supporting player — its soft, slightly floral sweetness mirrors the tea almost perfectly, and a thin pear slice as garnish reinforces the theme visually as well as on the palate.   • 45 ml pear nectar or pear juice
  • 15 ml elderflower liqueur (such as St-Germain)
  • 90 ml dry sparkling wine, chilled
  • Thin pear slice, for garnish
  • Ice cubes

How to make it

  1. 1Brew the tea concentrate and chill it fully in the refrigerator or over ice.
  2. 2Fill a wine glass or flute with ice.
  3. 3Add the chilled tea concentrate, pear nectar, and elderflower liqueur. Stir gently to combine.
  4. 4Top slowly with chilled sparkling wine.

  6. 6For the mocktail: omit the sparkling wine and elderflower liqueur, top with chilled sparkling water or non-alcoholic sparkling cider, and stir in 10 ml elderflower cordial in place of the liqueur.
