Mengding Huangya Honey Calm Tonic

Mengding Huangya doesn't need much help — its sealed-yellowing process already gives it a soft, mellow sweetness that most teas have to earn through additions. This tonic is built around that idea: keep it simple, and let the tea's own gentle character carry the cup.
A small amount of fresh ginger adds warmth without heat, supporting the tea's traditional reputation as an easy, settling drink after meals. Because the tea itself is delicate, the ginger should be barely steeped — just enough to round out the edges, not enough to dominate.
Honey is stirred in off the heat to preserve both its flavor and the tea's own subtle nuttiness. A small squeeze of lemon at the very end brightens the cup without overwhelming Mengding Huangya's signature softness — use a light hand, since this tea has very little astringency of its own to push back against added acidity.

Ingredients
- 2g (about 1 tsp) Mengding Huangya tea leaves
- 1 cup water, 80°C (175°F)
- 2 thin slices fresh ginger
- 1 tsp honey
- Small squeeze of fresh lemon juice (a few drops)
How to make it
- 1Warm a cup or small teapot with a splash of hot water, then discard.
- 2Add the tea leaves and ginger slices, then pour the 80°C water over them.
- 3Steep for 2–3 minutes, then strain out the leaves and ginger.
- 4Let cool slightly for 1 minute, then stir in the honey until dissolved.
- 5Add a few drops of lemon juice just before drinking, and sip warm.
