Iced Mengding Huangya with Peach and Mint

Cold-brewed Mengding Huangya with fresh peach and mint — a delicate, lightly sweet iced tea that preserves the tea's mellow, nutty softness without bitterness.

Cold brewing is the best way to enjoy Mengding Huangya iced, since hot-brewing and then chilling tends to dull this tea's delicate sweetness and can pull out unwanted bitterness as it sits. A slow, overnight cold extraction instead draws out the tea's gentle nuttiness and soft golden color while keeping the cup smooth and refined.

Fresh peach is the natural partner here — its juicy sweetness echoes the tea's own honeyed undertone rather than fighting it, and the pairing feels true to the tea's character: subtle, elegant, never overpowering. A few mint leaves added at the end lend a light, cooling freshness perfect for a warm afternoon.

Resist the urge to add sweetener until you've tasted the finished drink — the natural sugars from the peach combined with the tea's own mellow sweetness are often enough on their own. If you do want more sweetness, a small amount of honey syrup blends in more smoothly than granulated sugar.

Serve in a tall glass over ice with thin peach slices and a sprig of mint. This is an ideal warm-weather way to introduce newcomers to yellow tea, since the chilled format and fruit pairing soften any unfamiliarity with the style.

Ingredients

  • 2 tbsp (about 10g) Mengding Huangya tea leaves
  • 4 cups cold filtered water
  • 1 ripe peach, sliced, plus extra for garnish
  • 8–10 fresh mint leaves
  • 1 tbsp honey syrup (optional, to taste)
  • Ice cubes

How to make it

  1. 1Combine tea leaves, cold water, and peach slices in a large jar or pitcher.
  2. 2Cover and refrigerate for 8–10 hours (overnight is ideal).
  3. 3Strain through a fine sieve, pressing the peach slices gently to release their juice. Discard solids.
  4. 4Stir in honey syrup if using, tasting first since the peach often provides enough sweetness on its own.
  5. 5Fill glasses with ice, pour over the cold-brewed tea, and garnish with fresh peach slices and mint leaves.
