Everything they pour upstairs, they will sell you in a 50 g packet. That is rarer in London than the tatami room downstairs.

Katsute100 sits at 147 Brick Lane, in the stretch between Spitalfields and the Bangladeshi restaurants, and it is open every day from eleven to eight. The shop describes the room as divided by vintage Japanese screens set against turn-of-the-century British fittings, with a tatami room in the basement that customers can reserve. It is a tea room first: you sit, you are served, and the same leaf is on the shelf by the door in packets to take away.

The list is Japanese and narrow on purpose. Three greens step up the ladder rather than sitting side by side: an organic Fukamushi Sencha Asanoka, a Kyoho Sencha four pounds above it, and an Uji Premium Gyokuro at the top. Below them a roasted hojicha is the cheapest thing in the shop, and a ginger oolong is the one outlier that is not green at all. Matcha comes as a ceremonial Karin in 30 g. Every packet is 50 g except the matcha, so the prices compare directly, which is unusual and useful.

What it does not have is black tea you can take home with a weight on the label, which in this borough matters less than it sounds: the grocery four doors down sells Indian leaf by the kilo. The house runs five sites in all, in Angel, Broadway Market, Covent Garden and Edinburgh alongside this one, and lists workshops and a wholesale programme on the same site as the shop. Come for the greens, and book the basement if you want the tea served rather than weighed.

    Organic Fukamushi Sencha Asanoka 50g

    Fukamushi means deep-steamed: the leaf is broken smaller, the liquor comes out cloudy green and the flavour arrives faster and thicker than a standard sencha. It is the cheapest of the three greens and the one to start on, because everything above it on this shelf is a variation of the same idea.

    Roasted green leaf, brown in the cup, and the one tea here that works in the evening because roasting burns most of the caffeine off. It is also the cheapest packet in the shop, which makes it the low-risk way to find out whether you like the house's sourcing.

    The one thing on the shelf that is not Japanese green, and the only oolong you can buy over a counter in this borough. Ginger and oolong is a blend rather than a single leaf, so treat it as the shop's own recipe and not as a benchmark for Taiwanese tea.

The one worth the trip

Uji Premium Gyokuro 50g

Gyokuro is shaded for around three weeks before picking, which is why it costs what it costs and why it tastes closer to broth than to tea. Brewed properly it takes water at about 50 degrees and a tiny cup, and one 50 g packet lasts months. Almost nowhere in east London sells Uji gyokuro over a counter; this is the reason to make the trip rather than order it.
