The shop is Room 3201. You take a lift to the 32nd floor, sit down in a tea room above Russell Street and brew the cake before you decide.

Sun Sing began as a company in 1996, exporting and wholesaling antique pu-erh, and opened its retail shop in April 2002 on Cameron Road in Tsim Sha Tsui. Today the address is Room 3201 on the 32nd floor of Soundwill Plaza, at 38 Russell Street in Causeway Bay: a sky tea room with a self-brew service, where you brew what you are about to buy. The house also teaches tea classes and is a Quality Tourism Services merchant of the tourism board, with a 30-day exchange at the shop.

Pu-erh is the reason to come, and it is arranged by decade: from the numbered labels of the early 1900s through to cakes from 2011 onwards, with the house's own cakes pressed since 2004. Among them is a 2011 ecological ripe cake of around 400 g. The same cabinet keeps aged Liu An and antique Liu An baskets, the dark tea of Anhui, next to the Yunnan cakes. It is a list you read with a pot in front of you, which is what the sky tea room is for.

The everyday shelf is sold the Hong Kong way, by the tael: one tael is 37.5 g, two taels 75 g. A red-heart Tieguanyin and jasmine small dragon pearls come in two-tael packs; a West Lake Longjing, a Dong Ding, a Jinhua black from Zhejiang and a Zhenghe white peony in 75 g; a Da Hong Pao in a single tael. Local delivery is free from HK$500 and HK$50 below that, and overseas parcels go by Hongkong Post.
